Menu new years eve

Appetizers
You start with a trio of warm and refreshing delights:
– Breaded langoustine with horseradish, yogurt sauce and chives.
– Smooth tomato and bell pepper soup with basil oil and pulled duck.
– Roll of gravad lax with snow crab, fennel, sesame, curry sour cream sauce and lemon caviar.

Half lobster Belle-Vue (out of the shell), served with purslane, spinach, dill, trout roe and a creamy whisky cocktail sauce. A festive start with a fresh touch.

Pan-seared partridge fillet with brown Savora mustard sauce, truffle jus and red cabbage chutney with raisins and a crispy accent. Finished with pork belly and broad beans.

Duo of grilled monkfish tournedos and pan-fried white halibut, served with a rich fish and shellfish sauce with wild mushrooms. Accompanied by a stuffed chestnut mushroom, blood sorrel cress, trio of carrots and Brussels sprouts.

Meringue ice creation with raspberry, strawberry and apple blossom. Finished with calamansi crèmeux, yogurt crumble and a refined chocolate fantasy.
